Material

Dates - 2 cups

Method

First of all, we will start by removing the seeds from the date palm. On a chopping board, cut all the dates and keep them aside. After this, chop almonds and pistachios.

2. khajur milk

material

Milk - 2 cups

Fresh dates – 5-8

Method

Wash and peel the dates and remove the seeds. Cut them into small pieces so that they are easy to drink or eat. Add chopped dates to boiling milk and boil for 15-20 minutes. Halve the milk. You can also make it with dried dates, but you need to soak it in water for an hour beforehand.

3. Date pudding

Dates (peeled and chopped) - 1 cup

Ghee - 1/3 cup

Sugar - 2 tbsp

Hot water - 1/2 cup

Cardamom powder - 1/4 tsp

Cashew nuts (broken) - 1 tbsp

Method The date palm should be seedless. Cut it roughly. Measure out 1 cup and transfer to a bowl.

Add hot water. Keep aside covered for 30 minutes. Make sure that the dates are completely soaked in water. Now it must have become soft. Now put it in a mixer jar and grind it finely.

Put the date puree in a thick-bottomed pan. Add sugar to it. Keep cooking till it starts turning dark in color and thickens a bit. Start adding ghee to it. Add 1 or 2 teaspoons of ghee at a time. Add ghee little by little and keep cooking.

Keep cooking on low flame and keep adding ghee in between and when the halwa starts sticking, the halwa will absorb the ghee. When ghee leaves the edges, add cardamom powder. Add one tsp ghee and fry cashews till golden brown. Put in the pudding. Stir quickly and switch off the flame.

4. Date laddus

material

Dates (seeded) - 1 cup

Cashews, pistachios, almonds, raisins, walnuts – cup

Dry coconut - 1 tbsp

Vanilla essence - ¼ tsp

Ghee - 1 tbsp

Method

Heat a pan and add dry fruits and fry for 2 minutes. Put the roasted dry fruits in the mixer and grind them to a coarse paste by running the mixer just once.

Take dates in a pan and fry the dates till they become soft.

Take out the dates in a mixer jar and run the mixer only once or twice and grind them coarsely.

Take out the ground dry fruits and dates in a mixing bowl. Add ghee, dry coconut, and vanilla essence and mix well.

Mix all the ingredients. Make small lemon-sized balls from the date mixture. Store them in an airtight container and enjoy healthy laddus for weeks.

5. Date chutney

material

Dates - 100 grams

Red Chili Powder - ½ tsp

Cumin Powder - ½ tsp

Finely chopped dried fruits

Black salt - 1/4 tsp

salt to taste

Method

Remove and wash the date palm seeds. Now soak the dates. Soak them in two cups of water for about two hours. After this, take them in a vessel and cook them for 5-7 minutes.

After cooking, grind finely in a mixer and add red chili powder, cumin powder, dry fruits and black and white salt. Dates chutney is ready. Serve it with parathas, samosas or any namkeen.

Date chutney can be used for a few days.







6. Dates cake

material

Dates - 1 cup

Dates coarsely chopped - 6

Water - 1 cup

Butter - 6 tbsp

Sugar - 1 cup

Eggs - 2

All-purpose flour - 1.5 cups

Baking soda - ½ tsp

Baking powder - 2 tsp

Vanilla essence - 1 tsp

Method

Boil 1 cup of dates with 1 cup of water until the dates become soft and pulpy. This may take around 2-3 minutes. Make a smooth paste out of it. Keep aside to cool completely.

Beat together margarine and sugar until light and cushy.

Add eggs and beat until creamy.

Add date paste and mix well.

Sift the baking powder, baking soda together with the flour. Add this flour little by little to the date batter. Mix gently with a spatula. Add vanilla essence and chopped dates. Pour this batter into a greased cake pan.

Bake in preheated oven to 180°C for about 40 to 50 minutes until a toothpick inserted comes out clean. Dates Cake is ready.

7. Date Payasam

Material

Dates - 1 cup

Milk - 2 cups

Water - 1 1/2 cups

Cashew - 12

Raisins - 6

Cardamom powder - 1/2 tsp

Ghee - 2 tsp

Method

Finely chop the dates. Put milk in a pan and let it boil on a low flame.

Heat ghee in a separate pan. Add chopped dates and fry for a minute. Remove and keep aside. Add cashews and raisins to the pan. Fry till golden brown.

Add the required amount of water to the dates and cook till they are completely mashed. Add boiled milk and boil till it thickens.

Add cardamom powder and simmered dry natural products to it. Let the kheer simmer on a low flame for another 5 to 10 minutes, till the kheer thickens. Remove it and serve at room temperature or chilled.
