3. Date pudding
material
Dates (peeled and chopped) - 1 cup
Ghee - 1/3 cup
Sugar - 2 tbsp
Hot water - 1/2 cup
Cardamom powder - 1/4 tsp
Cashew nuts (broken) - 1 tbsp
Method The date palm should be seedless. Cut it roughly. Measure out 1 cup and transfer to a bowl.
Add hot water. Keep aside covered for 30 minutes. Make sure that the dates are completely soaked in water. Now it must have become soft. Now put it in a mixer jar and grind it finely.
Put the date puree in a thick-bottomed pan. Add sugar to it. Keep cooking till it starts turning dark in color and thickens a bit. Start adding ghee to it. Add 1 or 2 teaspoons of ghee at a time. Add ghee little by little and keep cooking.
Keep cooking on low flame and keep adding ghee in between and when the halwa starts sticking, the halwa will absorb the ghee. When ghee leaves the edges, add cardamom powder. Add one tsp ghee and fry cashews till golden brown. Put in the pudding. Stir quickly and switch off the flame.
4. Date laddus

Date chutney can be used for a few days.

Dates - 1 cup
Dates coarsely chopped - 6
Water - 1 cup
Butter - 6 tbsp
Sugar - 1 cup
Eggs - 2
All-purpose flour - 1.5 cups
Baking soda - ½ tsp
Baking powder - 2 tsp
Vanilla essence - 1 tsp
Method
Boil 1 cup of dates with 1 cup of water until the dates become soft and pulpy. This may take around 2-3 minutes. Make a smooth paste out of it. Keep aside to cool completely.
Beat together margarine and sugar until light and cushy.
Add eggs and beat until creamy.
Add date paste and mix well.
Sift the baking powder, baking soda together with the flour. Add this flour little by little to the date batter. Mix gently with a spatula. Add vanilla essence and chopped dates. Pour this batter into a greased cake pan.
Bake in preheated oven to 180°C for about 40 to 50 minutes until a toothpick inserted comes out clean. Dates Cake is ready.

7. Date Payasam
Material
Dates - 1 cup
Milk - 2 cups
Water - 1 1/2 cups
Cashew - 12
Raisins - 6
Cardamom powder - 1/2 tsp
Ghee - 2 tsp
Method
Finely chop the dates. Put milk in a pan and let it boil on a low flame.
Heat ghee in a separate pan. Add chopped dates and fry for a minute. Remove and keep aside. Add cashews and raisins to the pan. Fry till golden brown.
Add the required amount of water to the dates and cook till they are completely mashed. Add boiled milk and boil till it thickens.
Add cardamom powder and simmered dry natural products to it. Let the kheer simmer on a low flame for another 5 to 10 minutes, till the kheer thickens. Remove it and serve at room temperature or chilled.
